The main objective of the project is to facilitate product innovation in the food industry based on edible insects.
To this end, the project will provice two deliverables:
- a roadmap for the markteing of insect-based foods and
- the production processes on an industrial scale for several (up to 4) stable intermediate products (pasta and/or powder), with a known shelf life and fully characterized (e.g. shelf life, nutrient composition, physico-chemical properties, cost analysis, LCA, ...).
To ensure feasibility, the project will be focused on the yellow mealworm (Tenebrio molitor) and the lesser mealworm (Alphitobius diaperinus).
