Insecten kweken als eiwitvervanger in de voeding

The main objective of the project is to facilitate product innovation in the food industry based on edible insects.

To this end, the project will provice two deliverables:

  1. a roadmap for the markteing of insect-based foods and
  2. the production processes on an industrial scale for several (up to 4) stable intermediate products (pasta and/or powder), with a known shelf life and fully characterized (e.g. shelf life, nutrient composition, physico-chemical properties, cost analysis, LCA, ...).

To ensure feasibility, the project will be focused on the yellow mealworm (Tenebrio molitor) and the lesser mealworm (Alphitobius diaperinus).
